Ingredients
- 4 boneless, skinless chicken breasts or 8 bone-in chicken pieces
- 3 tablespoons Get Grill Jerk Spice
- 1/2 cup soft butter or margarine
- 1 tablespoon olive oil (for pan-frying, if needed)
- 1 onion, chopped
- 1 bell pepper, chopped
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Prepare the Jerk Marinade
In a bowl, combine the Jerk Spice Mix with soft butter or margarine. Mix well until it forms a smooth paste. - Marinate the Chicken
If using boneless chicken breasts, coat them evenly with the Jerk Spice and butter mixture. If using bone-in chicken, make lacerations on the chicken with a sharp knife and ensure the marinade gets into the cuts. Marinate for at least 2 hours, or preferably overnight in the refrigerator. - Grill or Bake
Preheat your grill or oven to medium-high heat. Grill or bake the marinated chicken until it reaches an internal temperature of 165°F (74°C) and the exterior is nicely charred and flavorful. - Pan-Fry (Optional for Stripped Raw Chicken)
If using stripped raw chicken, heat olive oil in a pan over medium-high heat. Add the chopped onions and bell peppers. Sauté until they are softened and slightly caramelized. Add the marinated chicken and cook until fully cooked. - Rest and Garnish
Let the grilled or baked chicken rest for a few minutes before serving. If you pan-fried the chicken, mix it with the sautéed onions and peppers. Garnish with fresh parsley or cilantro if desired. - Serve
Serve the Jerk Spice Chicken with your favorite sides such as rice, beans, or a tropical fruit salsa for a complete and flavorful meal.
